Easy Blender Tomato Soup

When I was a teen, my mom used to make me a mug of tomato soup when I was sick. It was just the condensed canned version, but she would put a little extra "love" into it with a pat of butter and a sprinkle of parmesan cheese.

As an adult, I still crave that hot mug of soup when I'm not feeling well or just want to feel my mom near. The canned version doesn't fit my palate anymore, but this simple recipe is perfect. It's also a great way to get those veggies into your day.

This version uses canned tomatoes, but you can substitute those for the same amount in weight of fresh (any variety will work). Also, my stomach isn't the happiest on dairy anymore, so the optional nutritional yeast gives a bit of that cheesy flavor. And I still serve it with a pat of ghee to replace the butter, but you make this totally your own.


Prep Time: 10 mins

Servings: 1-2


Equipment:

  • Vitamix (or another high-powered blender)
  • Saucepan (optional)

Ingredients:

  • 1, 28-oz can of whole tomatoes (try Fire-Roasted)
  • 1/4 cup diced onion
  • 1 tsp chopped garlic
  • 1 carrot
  • 1 stalk celery
  • 3 leaves of fresh basil or 1tsp dried
  • 2 tablespoons Nutritional Yeast (optional)


Directions:

  • Sauté onions and garlic if desired to bring out more flavor.
  • Add all ingredients to the blender. If using a high-powered blender, blend for 5 minutes or until hot.
  • Otherwise, blend until smooth and transfer to saucepan and heat on the stove. Enjoy!
